Blueberry Cacao Breakfast Cookies

This is in addition to high antioxidant ingredients like dried blueberries and cacao nibs, so you’re getting a high fiber, antioxidant rich breakfast disguised as a cookie. Enjoy with a hard boiled egg for the perfect combo to keep you full until lunch.
Tip: Instead of jarred applesauce, you can easily make your own by simmering a large apple in a bit of water until soft and then mashing. You’ll get more nutrients that way, and a tastier treat!

Ingredients
1/4 cup applesauce
1/4 cup maple syrup
1/4 cup coconut oil, melted
2 tablespoons almond butter
2 tablespoons ground flax seed
1/2 cup oats
1/2 cup almond flour
1/4 cup arrowroot
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup coconut flakes
1/4 cup cacao nibs
1/2 cup dried blueberries
1/2 cup chopped pecans

Instructions
Preheat oven to 350 degrees F.
Combine the applesauce, maple syrup, coconut oil, almond butter, and flax in a bowl. Let stand for 5 minutes.
Add the remaining ingredients and mix well.
Use a cookie scoop and scoop onto parchment lined baking sheets.
Bake for 10-12 minutes. Let cool completely before serving.
Store in an airtight container or freeze for longer term storage.
