Grilled Chicken and Peach Caprese

Prep time: 20 minutes
Make sure your peaches are ripe and unpeeled, and take your mozzarella out of the fridge before you start — it will have a much more mellow, creamy flavor at room temperature.
You may have to get your peaches a few days in advance. Many of the peaches you find at the store are not ripe yet!
Ingredients
2 chicken breasts
1 tablespoon olive oil
2 ripe peaches, pitted and sliced
4 ounces fresh mozzarella cheese, sliced
Fresh basil leaves
Sea salt and fresh ground pepper, to taste
Instructions
Preheat a gas or charcoal grill to medium high heat.
Brush the chicken breasts with oil and season with salt and pepper.
Grill until cooked through and charred. Let rest slightly.
Slice the chicken and layer on a plate with the peaches, mozzarella.
Enjoy!
