Mint Chia Fruit Salad

The fruit here is only a suggestion — you can use literally whatever you want.
The best fruit is in season, local fruit, so shop your farmer’s market for the best selection. You can do an all berry version in the spring, and then as summer rolls into full swing, a stone-fruit version with peaches, plums, and apricots would be delicious. Use your imagination to come up with your favorite.
Ingredients
1 cup sliced strawberries
1 cup sliced peaches
1 cup diced melon
2 mandarin oranges
1/2 cup grapes
1/2 cup diced pineapple
2 tablespoons fresh chopped mint leaves
2 tablespoons chia seeds
Juice and zest of 2 limes
2 teaspoons honey
1 tablespoon olive oil
Pinch of salt
Instructions
Toss the fruit in a large bowl with the mint leaves.
Whisk the chia, limes, honey, and olive oil in a bowl or shake in a jar.
Toss with the salad.
Chill until ready to serve.
