Mustard Shallot Tuna Cakes

Serves 2-4

Ingredients
3 tablespoons olive oil, divided
1 shallot, minced
2 cloves garlic, minced
2 cans high quality tuna, drained and flaked
1 egg
1/2 cup almond flour
1 teaspoon Dijon mustard
2 green onions, minced
1/4 cup finely chopped parsley
Juice of 1/2 lemon

Instructions
Heat half the oil in a heavy skillet and add the onions and garlic. Cook until softened and add to a mixing bowl.
Add the remaining ingredients and mix well. Form mixture into 2-4 equal sized patties.
Heat the remaining oil over medium high heat and cook the patties until browned on both sides. Serve immediately.
