Savory Steak and Mushroom Skewers

Rich and flavorful, a good grass-fed steak cubed and grilled with mushrooms and onions is sure to be a hit. A drizzle of balsamic vinegar at the end adds more flavor.
My favorite steak to use is rib eye. Chuck eye makes a less expensive alternative. If you're looking for something leaner, sirloin works...but it's good to marinade it beforehand. Rib eye and chuck eye steaks have a lot of fat that helps keep the steak tender during cooking.
Tip: You can use wooden or metal skewers for these, but if you use wood, you should soak them first to keep them from catching fire.
Ingredients
1 pound beef, cubed
12 button mushrooms
1 onion, cut into 1 inch pieces
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon thyme
Sea salt and fresh ground pepper, to taste
Instructions
Thread the beef, mushrooms, and onion onto skewers.
Brush with oil and season with salt and pepper.
Grill until steak is cooked to your liking, and mushrooms and onions are charred.
Brush with vinegar and sprinkle with thyme.
